Peanut Butter Oatmeal Cookies
This cookie is perfect if you love peanut butter and want to keep your kitchen cool - it's a no-bake recipe! It's adapted from an old-fashioned recipe to be naturally gluten free and doesn't contain processed sugar.
Ingredients
1 cup creamy peanut butter (ideally natural without salt or sugar)
1/2 cup maple syrup (not pancake syrup)
2 cups rolled oats (not instant oatmeal)
2 tablespoons unsweetened cocoa (optional)
Place oats in a large bowl. For chocolate cookies, add unsweetened cocoa to the oats and toss thoroughly.
Heat peanut butter and maple syrup in a small saucepan over medium heat. Stir until fully incorporated. Pour hot mixture over the oats and fold until a mass is formed.
Scoop up a small amount with a tablespoon and form it into a ball with your hands. Place on a cookie sheet covered with wax paper or parchment. Flatten gently with fingers.
Place the cookies in a covered container and cool in the refrigerator for a few hours. Enjoy!
Yields 20 cookies.
